strawberry banana quinoa bites

Strawberry Banana Quinoa Bites is what I’ve decided to call them, because that’s exactly what they are. Little bites full of flavour and full of nutrients! Last weekend, I had in my pantry quinoa & quinoa flour and I had in my freezer, ripened bananas & frozen strawberries. So I went in search for a delicious little recipe that I could test out. What I found was this recipe from a blog called Poor Girl Eats Well. Seriously, a girl after my own heart…and wallet! So thank you Kimberly for the wonderful recipe. 
I know I’ve been posting a lot of health-conscious recipes on Flavour lately, but since joining this wonderful “food blogging” world, I’m starting to notice the “fruits of my labour”…if you know what I mean… And as Spring has sprung here in Canada, I’m on a mission for a new beginning again this season. I’m challenging myself to discover delicious tasting flavours in beautifully simple and healthy foods. Once my garden gets going again this year, it’s going to be fresh eating every day. I’m so excited I’m jiggin’ in my boots! That’s right, jiggin’! But not to worry, I’m sure a cheesy, bacon filled recipe will find it’s way onto the blog sometime soon…how could I ever give up cheese!? 
So here we have it…a tasty healthy “bite”, full of new and interesting flavour combinations. Careful though, looks can be deceiving. These are quite small, but pack a punch of protein, so they’re extremely filling. Perfect as an on-the-go breakfast or as a quick morning or afternoon snack at work! AND they are ridiculously moist because of the mushy bananas and juicy strawberries, so no dry “muffin” here (which is truly what I dislike about muffins in the first place).

Ingredients
  

  • 1 1/3 cup quinoa flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup firmly packed brown sugar
  • 2 eggs lightly beaten
  • 2 Tbsp melted butter
  • 1 tsp vanilla extract
  • 2 medium overripe bananas mashed
  • 1 cup cooked quinoa
  • 1 cup finely chopped fresh strawberries I used frozen, then thawed
  • 1-2 strawberries thinly sliced as garnish

Instructions
 

  • Preheat the oven to 375°F.
  • Spray a muffin tin with cooking spray or line the tin with paper liners.
  • In a small bowl, mix the flour, baking powder and salt together, then set aside.
  • In a separate bowl, combine the brown sugar, butter, eggs & vanilla and whisk until smooth. Mix in the dry flour mixture a couple tablespoons at a time, stirring together until completely incorporated.
  • When all the flour has been mixed in, add the mashed bananas and the quinoa, and mix well. Add the chopped strawberries and fold into the muffin batter.
  • Divide the batter among the prepared muffin cups.
  • Place one strawberry slice on top of each muffin, and bake for about 25-30 minutes, until a toothpick inserted into the center of one of the muffins comes out clean.
  • Remove from oven and cool for a couple of minutes before removing muffins from pan.
  • Cool on a rack for about 10 minutes, or until ready to serve.
