Baby energy bites

I know these may look at little precarious, but I guarantee you that they taste like heaven! So why, you ask, do I have ‘pb + j’ in quotations for these little ‘pb + j’ baby energy bites? Well, because they taste just like a peanut butter and jelly sandwich…but have none of those ingredients. 
I’m not much of a sugary or chocolate snacker, but sometimes, I do get a little tiny craving for a bit of sweetness. Lately, I’ve coming across many recipes for energy balls, filled with beautiful, healthy ingredients. There’s this one, and that one, and let’s not forget this one! All so delicious and nutritious, packed with so many ingredients that I love for a quick little energy, pick-me-up snack. So, inspired by all of these lovely recipes, I looked in my kitchen cupboards, pulled out anything I thought would taste awesome together and here you have it, my version of a super-yummy-sweet-snack!

Ingredients
  

  • 1 cup large flake 100% whole grain oats
  • 2/3 cup dried figs soaked in hot water + drained
  • 3 tbsp hemp hearts
  • 2 tbsp cocoa powder
  • 8 tbsp raw almond butter
  • 2 1/2 tbsp cran-raspberry honey

Instructions
 

  • Before chopping the dried figs, soak them in hot water for about 10 minutes.
  • Drain and coarsley chop.
  • In large bowl, mix together oats, figs, hemp hearts and cocoa powder.
  • Add the almond butter and the honey and get in there with your hands and mix until all completely blended.
  • Adjust your wet to dry ratio if you’re finding it too wet or dry.
  • Roll into small 1″ balls and place on a plate.
  • Set to cool in refrigerator for about 30 minutes before eating.
  • Store in refrigerator and enjoy whenever you want…without the guilt!
