- 4 6-ounce lamb chops
- 1/4 cup light olive oil
- 1/4 teaspoon tarragon dried
- 1/4 teaspoon oregano dried
- 2 tablespoons red wine vinegar
- 2 tablespoons Dijon mustard
- salt and ground black pepper to taste
Mix together in a glass baking dish the mustard, red wine vinegar, tarragon, and oregano. Add your lamb chops, turning to coat all sides. Cover your baking dish and set aside for at least 1 hour.
Preheat your grill to medium-high heat. Remove your lamb chops from the marinade, and season with salt and pepper, to taste.
Grill lamb chops for several minutes per side or to your desired doneness.
Transfer the lamb chops into a serving dish.
