Ingredients
  

  • 4 6-ounce lamb chops
  • 1/4 cup light olive oil
  • 1/4 teaspoon tarragon dried
  • 1/4 teaspoon oregano dried
  • 2 tablespoons red wine vinegar
  • 2 tablespoons Dijon mustard
  • salt and ground black pepper to taste

Instructions
 

  • Mix together in a glass baking dish the mustard, red wine vinegar, tarragon, and oregano. Add your lamb chops, turning to coat all sides. Cover your baking dish and set aside for at least 1 hour.
  • Preheat your grill to medium-high heat. Remove your lamb chops from the marinade, and season with salt and pepper, to taste.
  • Grill lamb chops for several minutes per side or to your desired doneness.
  • Transfer the lamb chops into a serving dish.
  • Serve and Enjoy!
