- Mix together in a glass baking dish the mustard, red wine vinegar, tarragon, and oregano. Add your lamb chops, turning to coat all sides. Cover your baking dish and set aside for at least 1 hour.
- Preheat your grill to medium-high heat. Remove your lamb chops from the marinade, and season with salt and pepper, to taste.
- Grill lamb chops for several minutes per side or to your desired doneness.
- Transfer the lamb chops into a serving dish.
- Serve and Enjoy!
