Savory Homemade Meatloaf
I use this meatloaf recipe when I want to prepare a make-ahead dish that I either serve for a lunch or dinner meal!

- 1 lb. Ground beef
- 1 cup breadcrumbs
- 1 cup milk
- 1 red onion chopped
- 1 egg
- 1 medium carrot grated
- 2 tablespoons Dijon mustard
- 2 tablespoons brown sugar
- 1/2 cup ketchup
- 1/2 teaspoon parsley dried
- 2 tablespoons coriander fresh and chopped
- salt and black pepper to taste
Preheat your oven to 350° Fahrenheit.
In a mixing bowl, combine the egg, onion, beef, grated carrot, coriander, breadcrumbs, milk, and parsley. Mix well.
Transfer into a lightly greased loaf pan.
Combine the brown sugar, ketchup, and mustard in a small bowl. Pour mixture over meatloaf.
Bake the meatloaf in your preheated oven for 1 hour. Cool slightly, then slice into serving slices.
