Savory Homemade Meatloaf

I use this meatloaf recipe when I want to prepare a make-ahead dish that I either serve for a lunch or dinner meal!

Ingredients
  

  • 1 lb. Ground beef
  • 1 cup breadcrumbs
  • 1 cup milk
  • 1 red onion chopped
  • 1 egg
  • 1 medium carrot grated
  • 2 tablespoons Dijon mustard
  • 2 tablespoons brown sugar
  • 1/2 cup ketchup
  • 1/2 teaspoon parsley dried
  • 2 tablespoons coriander fresh and chopped
  • salt and black pepper to taste

Equipment

  • 1 oven
  • 1 mixing bowl

Method
 

  1. Preheat your oven to 350° Fahrenheit.
  2. In a mixing bowl, combine the egg, onion, beef, grated carrot, coriander, breadcrumbs, milk, and parsley. Mix well.
  3. Transfer into a lightly greased loaf pan.
  4. Combine the brown sugar, ketchup, and mustard in a small bowl. Pour mixture over meatloaf.
  5. Bake the meatloaf in your preheated oven for 1 hour. Cool slightly, then slice into serving slices.
  6. Serve and Enjoy!
