Coconut Rice

Ingredients
  

  • 2 cups coconut milk
  • 3 cups water
  • 2 tsp salt
  • 1 1/2 tsp sugar
  • 2 cup basmati rice
  • 6 tbsp chopped red pepper

Equipment

  • 1 saucepan

Method
 

  1. In a saucepan, combine coconut milk, water, salt, and sugar.
  2. Bring to a boil. Add rice, stir well and reduce heat to medium-low.
  3. Cover and simmer undisturbed until liquid is absorbed and rice is fluffy, about 20 minutes. Remove from heat and let sit.
  4. Fluff with a fork and add red pepper.
  5. Adjust seasoning to taste.
